DESCRIPTION:
The alkalinity of the ashes is defined as the sum of the cations, other than ammonium, combined with the organic acids of the wine.Determination takes place via the addition of a known quantity of acid to the ashes of the wine and its subsequent retrotritation with sodium hydroxide.
To verify the authenticity of the wine the ratio between the alkalinity of the ash and the ash can be used, which should be between 6 and 14 (normally 10).
