DESCRIPTION:

Total acidity is the sum of titrable acidities when it is titrated to ph 7 against a standard alkaline solution. particular attention must be paid to the elimination of carbon dioxide (co2) as the pH of the wine is in the form of carbonic acid (co32-), so it is to be considered an interferent.

The method uses the ph-metre to define the end of the reaction.

In addition to respecting legal limits for the type of wine, the correct management of total acidity enables the obtention of wine with a balanced and pleasant taste.
