This molecule is very sensitive to light and once the molecule reduces the effect known as "sunlight flavour" begins to present.

Therefore it is very important to determine the concentration of riboflavin present in the wine in order to deduce the potential for its developing the "sunlight flavour" and assess the effectiveness of different winery management approaches
