DESCRIPTION:

Glutathione is a tripeptide (l-γglutamyl-l-cysteinylglycine) with an antioxidant function that can be found in reduced form (GSH) or in oxidized form (GS-SG) where two molecules join via a disulphide bond.

GSH prevents oxidation thanks to its very low redox potential.

Experiments have shown that gsh content in grapes (hundreds of ppm) falls drastically in musts and wines with loss especially occurring in the pressing phases.
