The fatty acids of the glycerides present in the oil are transformed, via transesterification, into their respective methyl esters, which have greater volatility and lower polarity than the corresponding free acids. analytical determination of the methyl esters of the fatty acids makes it possible to obtain the percentage of individual chemical components present in an oil. The determination takes place via gc-fid (gas chromatography with flame photometric detector).
An acidic composition represents an indicator of the oil's authenticity and typical character.
