DESCRIPTION:
Parameter required for the verification of rectified concentrated musts (RCM). Indicates the concentration of cations (exchangeable metals) present in the RCM.
For determination a test sample is treated by a strongly acid cation exchanger. The cations are exchanged with H+ and are expressed by the difference between the total acidity of the effluent and that of the test sample.
The regulations in force provide for a maximum value of 8 milliequivalents per kilogram of total sugars in the RCM.
