DESCRIPTION:
The Total acidity of the rectified concentrated must (rcm) is the sum of titrable acidity when it is titrated to ph 7 against an alkaline solution.
Carbon dioxide is not included in the total acidity.
Titration can be done via potentiometry or with a blue bromothymol indicator for colorimetric comparison against a reference sample.
