DESCRIPTION:

The refractive index at 20°c, expressed both as absolute value or as percentage in sucrose mass, makes it possible, with reference to a particular table, to obtain the concentration of sugar in grams per litre and grams per kilogram of grapes for rectified concentrated grape musts (RCM) and concentrated grape must (CM).
