DESCRIPTION:

The decomposition of sugars over time or following thermal treatment generates hydroxymethylfurfural (HMF).

Determination takes place via HPLC separation (high pressure liquid chromatography) and UV-VIS detection.

HMFis practically absent in fresh must, so its value is an indicator of the state of conservation of the concentrated must. 

Current community legislation sets a maximum limit for rectified concentrated musts (MCR).
